A kind of carotenoid which is oil and water soluble
Crocetin is a dark orange pigment found in the gardenia fruit or stigma of saffron. It has amphipathic properties and dissolves in both water and oil. One of its important properties is that because of its small molecules size, it can be absorbed quickly and efficiently by our body. Researchers around the world are paying particular attention to its antioxidant capacity, as it can reach body tissues which other carotenoids cannot.
